Aria Offers Rare Cognac & Champagne Dinner Pairing

Sage at Aria is uniting with A. Hardy U.S.A. for a one-of-a-kind dinner party on Thursday, Oct. 9 at 6 p.m. The event is offering the opportunity to sip on rare cognac and Champagne – all paired with a five-course meal.

Executive Chef Richard Camarota designed the menu for this event with Craig Shoettler, Aria’s master mixologist, and Benedicte Hardy, CEO of A. Hardy, as hosts guiding guests through the dinner, explaining the history of each cognac and the thought process behind each Champagne pairing decision.

The flavorful dinner selections, which will have guests asking for seconds, feature the following culinary selections and champagne pairings:

  • Pork Terrine with poached fig, lemon cucumber pickles and frisee; paired with Drappier “Nature” Brut NV
  • Fois Gras Custard “Brulee” with pear jam, toasted cocoa nibs and salted brioche; paired with Drappier “Quattuor” Brut NV
  • Chestnut Soup ‘Masison’ with sweet potato, truffle and burnt marshmallow; paired with Drappier “Nature” Brut Rose NV
  • Kobe Skirt Steak ‘Diane’ with potato boulangere, spinach and wild mushroom; paired with Drappier “Grande Sendree” Brut 2005
  • Dark Chocolate Panna Cotta with apples, candied walnuts and plum ice cream; paired with Drappier Rose NV

After the meal, guests will sample Noces de Diamant, a cognac with apricot, almond, prune and leather notes and Perfection, which is an extremely rare 150-year-old cognac with hints of chocolate and coffee.
