Chowhound: All-Star Cochon at The Cosmopolitan of Las Vegas This Sunday

Anyone who’s a foodie like me should be in Las Vegas this Sunday, July 24 as national culinary completion Cochon 555 comes to The Cosmopolitan of Las Vegas for the first ever All-Star Cochon.

Birthed as a one-of-a-kind traveling culinary completion and tasting event, Cochon 555 traditionally features five chefs, five heritage pigs and five wine makers to promote sustainable farming of heritage breed pigs.   For All-Star Cochon, 10 previous Cochon winners and fan favorites along with the Chefs from the Cosmopolitan restaurants will create over 40 swine infused dishes for attendees to enjoy.   There will also be four butcher demos so guests can learn more about the culinary delight.   On the beverage side, there will a heap of wine makers present to pour bottomless glasses while artisan cocktails and craft brews will also be available.

Participating chefs and butchers include Joshua Applestone of Fleisher’s Meats (NY), Jamie Bissonette of Coppa (Boston), Mary Dumont of Harvest (Boston), the 2011 “King & Queen of Porc” Duskie Estes & John Stewart of Zazu (Sonoma), Ryan Farr of 4505 Meats (SF), Devin Knell of French Laundry (Napa), Stephanie Izard of The Girl & The Goat (Chicago), Mark Ladner of Del Posto (NYC), Amelia Posada and Erika Nakamura of Lindy & Grundy (LA), Alex Seidel of Fruition (Denver), Michael Sullivan of Blackberry Farm (Walland, TN), John Sundstrom of Lark (Seattle), Andy Ricker of Pok Pok (Portland), Jeremy Fox (Napa) and the 2010 “King of Porc” David Varley of Michael Mina (San Francisco).
